Banana Zucchini Oat Loaf (Printer-Friendly Version)

# What You'll Need:

→ Dry Ingredients

01 - 1 cup plain oats
02 - 2 teaspoons cinnamon powder
03 - 1 and a half cups of regular flour
04 - 1 teaspoon baking powder
05 - A teaspoon of baking soda
06 - Half a teaspoon of salt
07 - 1 cup regular sugar

→ Wet Ingredients

08 - 2 ripe bananas, mashed up
09 - 3 cups grated zucchini
10 - 2 large whole eggs
11 - 2 teaspoons of vanilla extract
12 - 1 cup of canola or other oil

# Let's Cook:

01 - Set your oven to 350°F. Grab three small loaf pans and get them ready.
02 - Toss the flour, oats, salt, baking soda, baking powder, and cinnamon into a big bowl and mix them up.
03 - In a smaller bowl, combine the eggs, sugar, mashed bananas, vanilla, and oil.
04 - Pour the wet ingredients into the dry stuff and stir everything together by hand. Add the shredded zucchini and mix it in well.
05 - Pop it in the oven and bake for about 35-45 minutes. You’ll know it’s ready when a toothpick comes out clean and the sides of the bread pull away from the pan.
