Preheat the oven to 190 degrees Celsius (375 degrees Fahrenheit). Place butter in the bottom of a 9x13-inch baking dish and place the dish in the oven to melt.

Once the butter is melted, add the shredded rotisserie chicken into the dish in a single layer. Evenly top with frozen mixed vegetables.

In a mixing bowl, combine the Cheddar Bay biscuit mix, its included seasoning packet, and the milk. Stir until well blended. Pour this mixture over the chicken and vegetables, spreading it lightly and evenly without stirring.

In a second bowl, whisk together the cream of chicken soup and chicken stock until smooth. Pour this over the biscuit mixture in the dish without stirring.

Bake the dish uncovered in the preheated oven for about 45 minutes, or until the top is very golden brown and the center is only slightly jiggly. Sprinkle with parsley if desired and let stand for 10 minutes before serving.
