Thai Spicy Noodles (Print Version)

# Ingredients:

→ Noodles

01 - 8 oz of flat rice noodles

→ Sauce

02 - 2 tablespoons of soy sauce
03 - 1/4 cup of creamy or chunky peanut butter
04 - 1 tablespoon of sesame oil
05 - 1/4 cup warm water for thinning
06 - 1 tablespoon of lime juice
07 - 1 teaspoon of sriracha (use more or less depending on heat preference)
08 - 1 clove of garlic, finely chopped
09 - 1 tablespoon of honey

→ Garnish

10 - A handful of crushed peanuts
11 - 1/4 cup finely sliced green onions
12 - Fresh cilantro leaves, if you'd like

# Instructions:

01 - Follow the package directions to cook the rice noodles. Once done, drain well and set them aside for later.
02 - Mix the peanut butter, soy sauce, sesame oil, lime juice, honey, sriracha, garlic, and warm water in a bowl until it's nice and smooth.
03 - Toss the prepared noodles in the sauce. Mix it all up until everything's evenly coated.
04 - Sprinkle the noodles with green onions, peanuts, and some fresh cilantro, if you're using it. Serve right away.

# Notes:

01 - You can refrigerate this dish for up to 2-3 days.
02 - When reheating, stir in a splash of warm water or more soy sauce to bring back the creamy texture.
03 - Feel free to add more sriracha if you like it spicier.
