# Ingredients:

01 - 12 slices thick-cut or country-style white bread
02 - 2 cups shredded cheddar cheese
03 - 1.5 cups shredded Monterey Jack cheese
04 - 6 oz cream cheese, softened
05 - 0.5 cup mayonnaise
06 - 0.25 teaspoon garlic powder
07 - 0.25 teaspoon onion powder
08 - 1 jar (4 oz) diced pimento, drained
09 - Kosher salt, to taste
10 - Black pepper, to taste
11 - Optional: 0.25 teaspoon cayenne pepper

# Instructions:

01 - In a mixing bowl, combine cheddar cheese, Monterey Jack cheese, pimento, mayonnaise, onion powder, garlic powder, and cayenne pepper. Mix thoroughly until well incorporated. Season with Kosher salt and black pepper to taste.
02 - Spread the prepared pimento cheese mixture evenly onto 6 slices of thick-cut white bread. Top each slice with another slice of bread to form a sandwich. Cut each sandwich diagonally for serving.
03 - Serve the sandwiches as is, or pair them with potato chips and salty pickles. Store leftover pimento cheese spread in the refrigerator for 3-5 days.
