In a medium bowl, stir together the flour, baking soda, and salt until well mixed.

Mix butter with both sugars for about 2 minutes until fluffy. Then add the egg, followed by peanut butter and vanilla.

Add dry ingredients to wet and mix slowly until everything comes together. Let the dough cool in fridge for at least an hour.

Heat oven to 350°F. Put parchment on your baking sheets. Make sure you've got room in your freezer.

Make 1 tablespoon balls of dough, roll in sugar if you want. Place them 3 inches apart and bake until cracked on top, about 11-13 minutes.

Push a chocolate heart into each hot cookie. Put cookies on a plate and stick in freezer for 10 minutes to harden the chocolate.
