Grab a baking sheet and cover it with parchment paper. Keep it handy.

In a big bowl, cream together the peanut butter and butter with a mixer until smooth. Toss in powdered sugar and, if you're using it, the vanilla. Mix everything fully, scraping the sides as you go.

Scoop out tablespoon portions, roll into balls, and pop them onto the sheet. Let them chill for a good 20 minutes before eating.
