Mini Lunchbox Pizzas (Print Version)

# Ingredients:

→ Dough

01 - 2 cups (300g) of self-rising flour
02 - 1 cup (250g) of plain whole-fat Greek yogurt

→ Toppings

03 - 1 cup (125g) of mozzarella, freshly grated
04 - ⅓ cup (90g) of thick tomato puree
05 - ½ cup (80g) of sliced pepperoni

# Instructions:

01 - Fire up your oven to 200°C (400°F) (180°C/350°F for fan setting). Grab a baking tray and line it with parchment.
02 - Throw the flour and yogurt into a big bowl. Stir using a spoon until clumps form. Then, get in there with your hands! Knead until the dough feels soft—this should only take a minute or two.
03 - Dust your counter lightly with flour. Roll out the dough to about 1 cm (1/2 inch) thickness. Use a big mug, glass, or cookie cutter to carve out circles. Gather the scraps, roll them out again, and repeat till no dough’s left.
04 - Arrange the dough rounds on your prepared baking tray. Spread a thin layer of tomato puree over each circle. Top it off with mozzarella, and finish with pepperoni slices.
05 - Slip the tray into the oven and bake for 12–14 minutes. Look for golden-brown dough and gooey melted cheese. Let it cool a bit on the tray before eating.

# Notes:

01 - If you’re out of self-rising flour, mix plain flour with baking powder instead.
02 - Freezes like a dream—great for prepping ahead.
03 - These taste great warm or chilled.
