Meatloaf with Mashed Potatoes (Print Version)

# Ingredients:

→ Meatloaf

01 - 2 pounds ground beef
02 - 1 cup dried breadcrumbs
03 - 2/3 cup ketchup, divided
04 - 1/2 cup onion, finely chopped
05 - 2 eggs
06 - 2-3 cloves garlic, minced
07 - 2 teaspoons Worcestershire sauce
08 - 2 teaspoons dried parsley
09 - 2 teaspoons salt
10 - 1/2 teaspoon freshly ground black pepper

→ Mashed Potatoes

11 - 3 pounds Yukon Gold potatoes, chopped
12 - 1 cup chicken broth or water
13 - 1/2 cup heavy whipping cream or half-and-half
14 - 1/2 cup sour cream
15 - 4 tablespoons unsalted butter
16 - Kosher salt and freshly ground black pepper, to taste

# Instructions:

01 - In a large bowl, mix together the ground beef, eggs, breadcrumbs, onion, garlic, Worcestershire sauce, 1/3 cup of the ketchup, parsley, salt, and pepper with your hands until evenly combined. Place the mixture in a disposable loaf pan or shape it into a loaf using aluminum foil.
02 - Layer the chopped potatoes evenly at the bottom of the Instant Pot. Pour chicken broth or water over the potatoes. Place the wire rack provided with the Instant Pot on top of the potatoes, then set the meatloaf on the wire rack.
03 - Close the Instant Pot lid, ensure the steam release valve is set to sealed, and set to manual mode on high pressure for 25 minutes. Once cooking is complete, perform a quick release of the pressure.
04 - Using the wire rack handles, remove the meatloaf from the Instant Pot and drain off any excess liquid. Brush the top of the meatloaf with the remaining ketchup. If desired, place the meatloaf under a preheated oven broiler for 3 minutes to caramelize the topping.
05 - Add heavy cream or half-and-half, sour cream, butter, and salt and pepper to the potatoes in the Instant Pot. Mash the mixture until smooth and creamy.
06 - Slice the meatloaf and serve alongside the creamy mashed potatoes. Enjoy!

# Notes:

01 - For best results, use Yukon Gold potatoes as they yield a creamier texture when mashed.
