Breakfast Burritos To Freeze (Print Version)

# Ingredients:

01 - 12 big burrito-size flour tortillas
02 - 1 bell pepper, chopped up
03 - 8 ounces of cheddar, shredded
04 - 1 medium yellow onion, diced
05 - 2 tablespoons of butter, split up
06 - 1 pound of cooked ham, cubed
07 - Salt and black pepper to season
08 - A dozen large eggs

# Instructions:

01 - Slice the onion and bell pepper into small pieces. Shred cheese if it isn’t already.
02 - Cook onion and bell pepper in 1/2 tablespoon of butter until soft and a bit golden. Add salt and pepper for flavor. Put them in a bowl.
03 - Cut ham into cubes and cook in a hot pan with 1/2 tablespoon butter until golden edges appear. Move it to another bowl.
04 - Beat eggs, then cook them lightly in the rest of the butter. Keep them soft and not too dry. Add salt and pepper as they cook.
05 - Start stacking fillings on tortillas: eggs, veggies, cheese, and ham. Fold up the bottom, tuck in the sides, and roll tightly.
06 - Wrap each rolled tortilla in parchment paper, label it, and stash them in freezer bags.

01 - Heat up straight from the freezer, or let it thaw first
02 - Leaving them in the fridge overnight helps with thawing
03 - Switch up the fillings to fit your taste
