Slice the onion and bell pepper into small pieces. Shred cheese if it isn’t already.

Cook onion and bell pepper in 1/2 tablespoon of butter until soft and a bit golden. Add salt and pepper for flavor. Put them in a bowl.

Cut ham into cubes and cook in a hot pan with 1/2 tablespoon butter until golden edges appear. Move it to another bowl.

Beat eggs, then cook them lightly in the rest of the butter. Keep them soft and not too dry. Add salt and pepper as they cook.

Start stacking fillings on tortillas: eggs, veggies, cheese, and ham. Fold up the bottom, tuck in the sides, and roll tightly.

Wrap each rolled tortilla in parchment paper, label it, and stash them in freezer bags.
