Place the quartered onion and parsley into a food processor. Pulse them together until finely minced.

In a big mixing bowl, toss in the ground beef, minced onion-parsley mix, and all the spices. Use your hands to mix it all up evenly.

Grab a portion of the meat mix with your hands and mold it around a skewer. The thickness should be roughly 1 to 1.5 inches.

If using a gas grill, preheat on medium-high and oil the grates to prevent sticking. Lay the skewered kebabs on the hot grill surface. Cook for 4 minutes on one side, flip, and grill the other side for another 4 minutes or until done.
