Crispy Chicken Rolls (Print Version)

# Ingredients:

01 - 4 slices of bread.
02 - 1 cup diced, cooked chicken.
03 - 1/2 cup finely chopped onions.
04 - 1/4 tsp garlic powder.
05 - 1 beaten egg.
06 - 2 Tbsp olive oil.
07 - 1/4 cup finely chopped bell peppers (red, orange, or yellow).
08 - Salt and pepper, use as you like.
09 - 1 Tbsp yellow mustard.
10 - 1/4 cup mayonnaise.

# Instructions:

01 - Use a rolling pin to press the bread flat. It'll fold easily this way. Once done, put them aside.
02 - In a big mixing bowl, combine the chicken, peppers, mayo, mustard, onions, garlic powder, salt, and pepper.
03 - Spoon a portion of the mix onto each flattened piece of bread.
04 - Roll the bread around the filling tightly. If needed, secure them with toothpicks.
05 - Warm olive oil in a big pan over medium to high heat.
06 - Take each roll and coat it with the beaten egg. Place them into the pan, keeping some space between each one.
07 - Fry each roll for about 1-2 minutes per side until they're golden brown.
08 - Let the rolls sit a few minutes to cool before eating.

# Notes:

01 - You can prepare the filling beforehand and keep it chilled.
02 - Toothpicks work great for holding rolls together while frying.
03 - Instead of frying, bake them at 375°F for 15 to 20 minutes.
04 - Switch mayo with Greek yogurt if you prefer.
05 - This is a smart way to make use of any leftover chicken.
