Rich Mini Dessert Cups (Print Version)

# Ingredients:

01 - 3 tablespoons butter, melted.
02 - 1 cup crushed graham crackers.
03 - 2 tablespoons sugar for the crust.
04 - 16 ounces soft cream cheese.
05 - 2 large eggs.
06 - 1/2 cup sugar for the filling.
07 - 1/4 cup whipping cream.
08 - 1 teaspoon vanilla.
09 - 1/4 cup sugar for the topping layer.

# Instructions:

01 - Preheat your oven to 325°F. Put paper liners in a muffin pan.
02 - Stir together the butter, crumbs, and sugar. Press this mix into each liner and bake for 5 minutes.
03 - Cream together the sugar and soft cream cheese. Add eggs one at a time, then mix in the vanilla and cream.
04 - Spoon the mixture onto the crusts. Bake for 18–20 minutes until slightly firm but still a bit wobbly.
05 - Let the cheesecakes cool down, then chill for 2 hours. Add sugar on top and caramelize it with a torch.

02 - Only caramelize the sugar layer right before eating.
