Preheat your oven to 325°F. Put paper liners in a muffin pan.

Stir together the butter, crumbs, and sugar. Press this mix into each liner and bake for 5 minutes.

Cream together the sugar and soft cream cheese. Add eggs one at a time, then mix in the vanilla and cream.

Spoon the mixture onto the crusts. Bake for 18–20 minutes until slightly firm but still a bit wobbly.

Let the cheesecakes cool down, then chill for 2 hours. Add sugar on top and caramelize it with a torch.
