Butterfly each dried apricot by cutting almost all the way through it, or gently peel them apart using your fingers.

In a small bowl, combine the cream cheese, thyme leaves, and black pepper. Adjust seasoning with salt to taste.

Place a small spoonful of the cream cheese mixture into the center of each prepared apricot.

Heat a large skillet over medium-high heat. Cook the bacon slices for 2 minutes on each side; do not cook them until crispy.

Roll each stuffed apricot in a strip of bacon, or use half a strip if the bacon pieces are too long. Secure each roll with a plain wooden toothpick.

Reduce skillet heat to medium-low. Gently place the bacon-wrapped apricots into the skillet. Cook until the bacon becomes crispy, rotating as needed. Take care not to overcook.

Transfer the cooked appetizers to a serving plate and serve immediately while the filling is still warm.
