Zesty Beef Noodle Bake (Print Version)

# Ingredients:

→ Meat and Pasta

01 - 1 pound ground beef (90% lean or substitute ground turkey)
02 - 12 ounces egg pasta noodles

→ Sauce Base

03 - 1 (14.5 oz) can chopped tomatoes
04 - 1 (10 oz) can spicy tomatoes with chilies (like Rotel)
05 - 1 (6 oz) can concentrated tomato paste
06 - 1 teaspoon powdered garlic
07 - 1 teaspoon dried onion powder
08 - 1 teaspoon table salt
09 - 1/2 teaspoon ground black pepper

→ Dairy

10 - 1 cup tangy sour cream or plain Greek yogurt
11 - 2 cups grated sharp cheddar cheese
12 - 1 cup freshly grated parmesan
13 - 1 cup shredded stretchy mozzarella

# Instructions:

01 - Warm your oven to 350°F. Lightly coat a 9x13 baking dish with cooking spray or butter.
02 - Cook ground beef in a hot skillet until no pink remains, pour off extra fat. Mix in all tomato products and spices. Let bubble gently for 15-20 minutes.
03 - Boil egg noodles until just tender but still firm. Drain water and mix noodles with sour cream.
04 - Put the creamy noodles into your prepared dish, pour meat mixture on top and scatter all cheese varieties over everything.
05 - Pop in the oven for 20-25 minutes until edges bubble and cheese turns golden. Let it sit for 5 minutes before dishing up.

01 - Save some cooking water from pasta for extra smooth noodles
02 - Meat tastes richer if you simmer it longer
