Lay a large square of foil and place garlic cloves on top with peel intact. Drizzle with 1 tablespoon olive oil and sprinkle with kosher salt. Fold foil into a sealed packet, place on a baking sheet, and roast in the oven for 25 minutes until soft and golden. Remove, cool, and peel.

Preheat oven to 450°F for baking the pizza.

Mash 8 peeled garlic cloves in a bowl. Add ricotta, 2 teaspoons olive oil, basil, honey, oregano, kosher salt, and pepper. Mix until well combined.

Stretch pizza dough into a 14-inch round or divide into two 8-inch rounds for separate meat and vegetarian versions. Place on greased baking sheets or pizza stone.

Top crust with tablespoon-sized dollops of ricotta mixture, evenly spaced. Add spinach, remaining garlic cloves, grilled chicken chunks (if using), and mozzarella cheese, dividing among pizzas if preparing multiple versions.

Bake at 450°F for 9-10 minutes until crust is crisp and golden and cheese is melted and bubbling. Cool for a couple of minutes, slice, and serve.
