White Pizza Spinach Garlic (Print Version)

# Ingredients:

→ Base Dough

01 - 1 pound refrigerated garlic & herb pizza crust dough or preferred pizza dough

→ Garlic Preparation

02 - 24 medium garlic cloves, peel left on
03 - 2 tablespoons olive oil, more for crust if desired

→ Ricotta Mixture

04 - 1 cup part-skim ricotta cheese
05 - 2 tablespoons chopped fresh basil
06 - 1 teaspoon honey
07 - 1/2 teaspoon dried oregano
08 - 1/2 teaspoon kosher salt, plus more for sprinkling
09 - 1/4 teaspoon freshly ground black pepper

→ Toppings

10 - 10 ounces frozen chopped spinach, thawed and squeezed dry
11 - 2 cups shredded mozzarella cheese, divided (approximately 8 ounces)
12 - Grilled chicken chunks (optional)

# Instructions:

01 - Preheat oven to 375°F. Drizzle a baking sheet with olive oil and place the pizza dough on top to rest as per package instructions (around 30 minutes if using Trader Joe's dough).
02 - Lay a large square of foil and place garlic cloves on top with peel intact. Drizzle with 1 tablespoon olive oil and sprinkle with kosher salt. Fold foil into a sealed packet, place on a baking sheet, and roast in the oven for 25 minutes until soft and golden. Remove, cool, and peel.
03 - Preheat oven to 450°F for baking the pizza.
04 - Mash 8 peeled garlic cloves in a bowl. Add ricotta, 2 teaspoons olive oil, basil, honey, oregano, kosher salt, and pepper. Mix until well combined.
05 - Stretch pizza dough into a 14-inch round or divide into two 8-inch rounds for separate meat and vegetarian versions. Place on greased baking sheets or pizza stone.
06 - Top crust with tablespoon-sized dollops of ricotta mixture, evenly spaced. Add spinach, remaining garlic cloves, grilled chicken chunks (if using), and mozzarella cheese, dividing among pizzas if preparing multiple versions.
07 - Bake at 450°F for 9-10 minutes until crust is crisp and golden and cheese is melted and bubbling. Cool for a couple of minutes, slice, and serve.

01 - Grilled chicken can be added to satisfy meat-eaters while keeping one version vegetarian. Adjust toppings as desired.
