Taco Casserole Twist (Print Version)

# Ingredients:

01 - 1 can (10 oz) tomatoes mixed with green chilies.
02 - 2 tablespoons of cooking oil.
03 - 1½ cups of shredded cheddar cheese.
04 - 3 tablespoons of taco spice blend.
05 - 1 chopped white onion.
06 - 4 minced garlic cloves.
07 - Salt and pepper as needed.
08 - A bag (9 oz) of Fritos chips.
09 - 1 can (15 oz) of pinto beans.
10 - 1 diced scallion.
11 - 1 cup of your favorite chunky salsa.
12 - 1 pound of ground beef, ideally 80/20 fat ratio.
13 - Optional additions: lettuce, sour cream, jalapeños, scallions.

# Instructions:

01 - Pour in the oil, toss in the onion and garlic, and sauté for about 6 to 8 minutes until soft.
02 - Crumble the meat into the pan, cook it up for 6 to 8 minutes, and let it brown nicely.
03 - Add the taco mix, beans, and scallion. Stir well for 1 to 2 minutes.
04 - Toss in the salsa and tomatoes, then let everything bubble together on low heat for 8 to 10 minutes.
05 - Spoon the mixture into a 9x13 pan, sprinkle cheese over the top, scatter the chips, and bake for 10 minutes at 350°F.
06 - Bring it to the table and top with your favorite extras. Serve it up warm!

01 - Taste your seasoning and add salt if needed.
