Lovers Day Cheesecake Pie (Print Version)

# Ingredients:

→ Graham Cracker Base

01 - 12 whole graham crackers, crushed (equals 1 1/2 cups or 180g)
02 - 1/4 cup white sugar (50g)
03 - 6 tbsp melted unsalted butter (85g)

→ Cream Cheese Mixture

04 - 2 packages (16 oz/452g) full-fat cream cheese, softened to room temp
05 - 1/2 cup white sugar (100g)
06 - 1/4 cup room temperature full-fat sour cream (60g)
07 - 1 tsp vanilla extract
08 - 1 tsp freshly squeezed lemon juice
09 - 2 large eggs, brought to room temp

→ Topping Ideas

10 - Sweet raspberry sauce
11 - Handful of fresh raspberries
12 - Fluffy whipped cream

# Instructions:

01 - Heat oven to 350°F. Combine graham bits, sugar, and melted butter. Spread mixture into a 9-inch pie plate without pushing down too hard.
02 - Pop the crust in the oven for 10 mins while you get the filling ready.
03 - Mix cream cheese with sugar till creamy. Stir in sour cream, vanilla, and lemon juice. Gently blend in eggs one after another just until mixed.
04 - Turn oven down to 325°F. Add filling to the warm crust. Bake about 35 mins until nearly set, covering with foil if needed.
05 - Leave out for an hour to cool, then stick in fridge for at least 2 hours before eating.
06 - Add your favorite toppings right before you serve it. Store leftovers in the fridge.
