In a medium pot on medium heat, combine the milk, sugar, and salt. Stir until the sugar's dissolved.

Turn the heat down to low so it keeps gently simmering. Stir the bottom now and then, no whisking needed. Let it cook for 30 to 45 minutes.

When it reduces to half and its color looks darker—like syrup—add the vanilla.

If there are any lumps or foam, strain it. Then let it cool all the way.

Put it in a sealed container and keep it in the fridge for up to a month. Warm it a little if it gets too thick to pour.
