Sweetened Condensed Milk (Print Version)

# Ingredients:

01 - 1/2 to 3/4 cup of sugar.
02 - 1 teaspoon of vanilla.
03 - 2 cups of regular milk.
04 - A pinch of salt, about 1/4 teaspoon.

# Instructions:

01 - In a medium pot on medium heat, combine the milk, sugar, and salt. Stir until the sugar's dissolved.
02 - Turn the heat down to low so it keeps gently simmering. Stir the bottom now and then, no whisking needed. Let it cook for 30 to 45 minutes.
03 - When it reduces to half and its color looks darker—like syrup—add the vanilla.
04 - If there are any lumps or foam, strain it. Then let it cool all the way.
05 - Put it in a sealed container and keep it in the fridge for up to a month. Warm it a little if it gets too thick to pour.

# Notes:

01 - Smaller pots can speed things up.
02 - It'll thicken more after it cools down.
03 - Don't stir it with a whisk after the sugar's gone.
