Strawberry Pastry (Print Version)

# Ingredients:

01 - 2 sheets of puff pastry.
02 - 4 cups of sliced fresh strawberries.
03 - 1 teaspoon of vanilla.
04 - 1 tablespoon of cornstarch.
05 - 1 tablespoon of granulated sugar.
06 - 1/2 cup of powdered sugar.
07 - 8 ounces of softened cream cheese.
08 - 1 egg mixed with a little water (1 tsp).
09 - Optional: 1/4 cup of strawberry jam.
10 - For glaze: powdered sugar, a splash of milk, and vanilla extract.

# Instructions:

01 - Let the pastry thaw for about half an hour. In the meantime, set the oven to 400°F. Toss the strawberries with the cornstarch and sugar, and give them 15 minutes to sit.
02 - Whisk the cream cheese until it’s silky, then stir in the vanilla and powdered sugar.
03 - Divide each pastry sheet into six rectangles. Lightly score a border around each piece, but don’t slice all the way through.
04 - Spoon the cream cheese into the middle. Add the strawberry mixture on top. Brush the outer edges with the egg wash and if you want, sprinkle on a little sugar.
05 - Chill the assembled pastries for 15 minutes if they’ve gotten too warm. Pop them in the oven for 20-25 minutes until the color’s a nice golden brown.
06 - Let them rest for five minutes to cool a little. Drizzle on the glaze or spread some warm jam over the top before serving.

# Notes:

01 - Keep the pastry cold while working.
02 - Avoid stuffing them too much or they'll overflow.
03 - Store leftovers in the fridge for 2-3 days.
