Strawberry Lemonade Loaf Cake (Print Version)

# Ingredients:

01 - 1 cup granulated sugar
02 - Zest of 1 lemon
03 - 1/2 cup unsalted butter, softened
04 - 4 large eggs
05 - 1 cup buttermilk
06 - 1 tsp lemon extract
07 - 1 1/2 cups strawberries, hulled and chopped
08 - 3 cups all-purpose flour
09 - 1 tsp baking powder
10 - 1/2 tsp baking soda
11 - 1/2 tsp salt

# Instructions:

01 - Preheat oven to 350°F. Butter two 8x4 loaf pans and set aside.
02 - In a large bowl, rub together the sugar and lemon zest until moist and fragrant.
03 - Beat in the softened butter until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the lemon juice.
04 - Add the buttermilk and lemon extract and mix until just combined.
05 - Fold in the chopped strawberries.
06 - In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
07 - Add the dry ingredients to the wet ingredients and mix just until combined.
08 - Divide the batter evenly between the prepared pans. Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
09 - Allow loaves to cool for 5-10 minutes before removing from pans.
