Put parchment paper or a silicone mat on a big baking sheet and set it aside.

Combine the graham cracker bits, cream cheese, and powdered sugar with a handheld mixer or in a food processor until everything sticks together. Carefully fold in your strawberry pieces.

Scoop out 1.5-2 teaspoons of mixture onto your lined sheet. Chill them for 30 minutes, then roll them into nice round balls and stick them back in the fridge.

Heat up the white chocolate using a double boiler or microwave (15 seconds at a time), stirring till it's completely smooth.

Dunk each cold ball into the melted chocolate, gently tap to get rid of extra chocolate, and put them back on the sheet. You can add color to any leftover chocolate and drizzle it over if you'd like.

Pop them in the fridge for 30 minutes or until the chocolate hardens completely before you eat them.
