Strawberry Cheesecake Bars (Print Version)

# Ingredients:

→ Crust

01 - 1/2 cup melted unsalted butter
02 - 1 1/2 cups crushed graham crackers

→ Cheesecake Filling

03 - 16 oz softened cream cheese
04 - 1/2 cup granulated sugar
05 - 1/4 cup sour cream
06 - 2 eggs at room temperature
07 - 2 tsp pure vanilla extract

→ Strawberry Compote

08 - 1/2 Tbsp freshly squeezed lemon juice
09 - 1 3/4 cups diced fresh strawberries
10 - 5 Tbsp granulated sugar
11 - 2 tsp cornstarch
12 - 3 Tbsp water

→ Topping

13 - 1/4 cup melted white chocolate

# Instructions:

01 - Turn the oven on to 350°F. Line your 9x9 pan with parchment and give it a quick spray of cooking oil.
02 - Combine crushed graham crackers with melted butter. Push down into the pan firmly using the back of a measuring cup.
03 - Whip together cream cheese, sugar, sour cream, and vanilla until smooth. Beat in eggs one at a time, mixing after each.
04 - Pour the smooth filling over the crust and bake for 40 to 45 minutes. The edges should look slightly golden, and the center will jiggle a bit. Cool down fully.
05 - Simmer strawberries, sugar, water, lemon juice, and cornstarch over medium heat. After 10 minutes, set aside to chill in the fridge.
06 - Slice the cooled cheesecake into bars. Make a little groove on each piece, top with compote, and drizzle with the white chocolate.

01 - You can make this ahead and chill it in the fridge overnight.
02 - For the best texture, let your ingredients warm up to room temperature.
03 - Tidy up the edges of the bars for a cleaner look, if you'd like.
