Garlic Butter Steak (Print Version)

# Ingredients:

01 - 1/4 cup butter or ghee, split up.
02 - 1 tbsp olive oil.
03 - 1 pound of Yukon gold potatoes, diced into 1/2-inch chunks.
04 - 3 minced garlic cloves.
05 - 1 tsp thyme (dried).
06 - 1/2 tsp oregano (dried).
07 - 1/2 tsp sea salt, plus extra if needed.
08 - 1/4 tsp black pepper, add more to taste.
09 - 1 1/4 lbs sirloin steak, cubed into 1/2-inch pieces.

# Instructions:

01 - Warm a cast iron pan on medium. Toss in the oil and 2 tablespoons of butter.
02 - Throw in the potatoes, garlic, and spices. Stir every minute or two—let cook for 8-10 minutes until soft and crispy brown.
03 - Scoop the potatoes out of the pan and put them aside for now.
04 - Crank up the heat to medium-high. Add the rest of the butter and steak. Let it sit untouched for 2 minutes to sear, then stir.
05 - Pour the potatoes back in. Mix everything together. Taste and tweak the seasoning before serving.

01 - Chop potatoes evenly for even cooking.
02 - Let the steak brown before stirring it.
