Spicy Egg Bean Bake (Print Version)

# Ingredients:

01 - 1 medium yellow onion, finely chopped.
02 - 3 cloves garlic, minced.
03 - 3 tablespoons olive oil.
04 - ½ teaspoon kosher salt.
05 - ½ teaspoon ground cumin.
06 - 1 tablespoon chili powder.
07 - 2 tablespoons tomato paste.
08 - 1 can (15 oz) black beans, rinsed.
09 - 1 can (14.5 oz) diced tomatoes with juice.
10 - 1 can (4 oz) green chiles, diced.
11 - ¼ cup cotija cheese crumbles.
12 - 1 tablespoon chopped cilantro.
13 - 4 large eggs.
14 - 8 warm tortillas for serving.

# Instructions:

01 - Set the oven to 375°F and let it heat up.
02 - Cook the garlic and onion in hot oil for about 7-9 minutes, stirring now and then, until golden.
03 - Mix in the chiles, black beans, tomato paste, tomatoes, and spices. Stir until it starts bubbling.
04 - Make little spaces in the sauce and gently add the eggs into them.
05 - Pop the skillet in the oven and cook for 15-20 minutes or until the whites are set but yolks stay soft.
06 - Top it with cilantro and cheese, then serve right away with warm tortillas.

01 - Eggs can be cooked longer if you prefer firmer yolks.
02 - Make the bean mixture ahead and save time.
