Soft Fresh Rolls (Print Version)

# Ingredients:

01 - 1 (¼-ounce) packet active dry yeast, roughly 2¼ teaspoons.
02 - 1¼ cups warmed milk.
03 - 5 tablespoons butter, unsalted and melted.
04 - 3 cups all-purpose flour, measured and leveled (375g)—plus some extra for kneading.
05 - 2 tablespoons granulated sugar.
06 - 1 teaspoon fine sea salt.
07 - Olive oil, used for brushing.
08 - 2 tablespoons melted butter (optional for finishing).
09 - A little extra sea salt for sprinkling at the end.

# Instructions:

01 - In a stand mixer bowl fitted with a dough hook, stir together yeast, milk, and 1 tablespoon sugar. Wait about 5 minutes for it to foam up. If there's no foam, grab fresh yeast and start over.
02 - Toss in the rest of the sugar, plus melted butter and salt. Turn on the mixer to its lowest setting to blend. Slowly add the flour, one cup at a time, while keeping it on low. Once all the flour is in, up the speed a little, and mix for two minutes until the dough's soft and just a bit tacky.
03 - Sprinkle flour on your work surface and move the dough there. Knead until it forms a smooth ball, adding a tiny bit of flour if it's sticking. Lightly oil a big bowl, pop the dough inside, cover it up, and let it rest for 1–2 hours until it's doubled in size.
04 - Coat a baking dish or tray (9x13-inch works!) with olive oil. Place the dough on a clean surface, split it up into 15 equal parts, and roll them into little balls. Lay them in the dish, sprinkle some flour over the top to avoid sticking, and cover with plastic wrap. Let them sit for another hour to puff up.
05 - Heat your oven to 350°F and place a rack on a lower setting to get ready for baking.
06 - Put the tray of rolls into the hot oven for 20–25 minutes, turning the pan halfway through. You'll know they're ready when the tops are golden and delicious-looking.
07 - Melt butter and mix in a pinch of sea salt. Once the rolls are out of the oven, brush this buttery mix over them. Eat while warm.

# Notes:

01 - These can be shaped and stored in the fridge overnight. Bring to room temperature before putting them in the oven.
02 - Fully bake and cool before freezing in a sealed bag. Reheat in the oven when serving.
