Slow Roasted Tomato Toast (Print Version)

# Ingredients:

01 - 500 g cherry tomatoes, sliced in half
02 - 8 tbsp ricotta
03 - 4 slices of sourdough bread
04 - Bunch of chives, finely chopped

05 - 3 tbsp extra-virgin olive oil
06 - 1 tbsp red wine vinegar
07 - Flakey salt (optional)
08 - Salt & Pepper

# Instructions:

01 - Preheat the oven to 160°C.
02 - Place the sliced cherry tomatoes onto a baking tray. Coat them with extra-virgin olive oil, red wine vinegar, salt, and pepper. Roast in the oven for 40 minutes.
03 - Toast the sourdough bread and spread two tablespoons of ricotta on each slice.
04 - Top each slice with the roasted cherry tomatoes, including the oily juices from the baking tray. Sprinkle with finely chopped chives, flakey salt (if using), and additional pepper.

01 - Choose ripe, firm, and evenly coloured cherry tomatoes for a sweeter flavour that intensifies during slow-roasting.
02 - Slow-roasting the tomatoes enhances their sweetness and concentrates the flavours.
03 - Use thick slices of good-quality rustic bread, such as sourdough, ciabatta, or multigrain, to complement the roasted tomatoes.
04 - Optional toppings include balsamic glaze, black sliced olives, or red pepper flakes for additional flavour.
