Shepherd's Pie Family Dinner (Print Version)

# Ingredients:

→ Meat Filling

01 - 2 tablespoons olive oil
02 - 1 large onion, diced
03 - 2 cloves garlic, minced
04 - 2 pounds ground beef or lamb
05 - 2 cups mixed vegetables (carrots, peas, corn)
06 - 2 tablespoons tomato paste
07 - 2 tablespoons Worcestershire sauce
08 - 1 cup beef broth
09 - 1 teaspoon dried thyme
10 - 1 teaspoon dried rosemary
11 - Salt and pepper to taste

→ Mashed Potato Topping

12 - 4 cups potatoes, peeled and diced
13 - 1/2 cup milk
14 - 1/4 cup butter
15 - Salt and pepper to taste
16 - 1 cup shredded cheddar cheese (optional)

# Instructions:

01 - Preheat oven to 200°C (400°F). Heat olive oil in a large skillet over medium heat. Add diced onion and cook until translucent, about 5 minutes. Stir in minced garlic and cook for 1 minute. Add ground beef or lamb, breaking it apart with a spoon, and cook until browned and no longer pink. Stir in mixed vegetables and cook for 5 minutes. Add tomato paste, Worcestershire sauce, beef broth, thyme, and rosemary. Simmer for 10 minutes until the sauce thickens. Season with salt and pepper. Transfer to a 23x33 cm (9x13 inch) baking dish.
02 - Place diced potatoes in a large pot and cover with water. Bring to a boil and cook until potatoes are fork-tender, about 15 minutes. Drain and return to the pot. Add milk, butter, salt, and pepper. Mash until smooth and creamy. Optionally, stir in shredded cheddar cheese for extra flavor.
03 - Spread mashed potatoes evenly over the meat filling in the baking dish. Optionally, brush with melted butter for a golden-brown top. Bake in preheated oven for 20-25 minutes until the top is golden and filling is bubbling. Let rest for 5-10 minutes before serving.

# Notes:

01 - Use freshly mashed potatoes for the best texture. Avoid instant mash.
02 - Let the pie cool before slicing to help the layers hold together.
03 - For a crispy golden top, broil the dish for the last 3 minutes of baking.
04 - You can swap beef broth for red wine to add depth of flavor.
05 - For a low-carb option, substitute cauliflower mash for the potatoes.
