Reuben Stuffed Baked Potatoes (Print Version)

# Ingredients:

→ Potato Base

01 - Salted russet potato

→ Filling

02 - 1/2 cup chopped corned beef
03 - 1/4 cup cream cheese
04 - 1/4 cup shredded Swiss cheese
05 - Drained sauerkraut

→ Topping

06 - 1 tablespoon shredded Parmesan cheese
07 - Paprika, to taste

# Instructions:

01 - Preheat the oven to 425°F. Scrub the potato under water and sprinkle with sea salt.
02 - Place the potato in the oven and bake for approximately 45 minutes.
03 - In a mixing bowl, blend the chopped corned beef, shredded Swiss cheese, and drained sauerkraut.
04 - Once the potato is baked, slice it lengthwise and scoop out the inside.
05 - Mash the scooped potato with cream cheese, then mix in the sauerkraut blend.
06 - Fill the potato skins with the creamy mixture, sprinkle with Parmesan cheese, and dust with paprika.
07 - Return the filled potatoes to the oven and bake for an additional 15-20 minutes until heated through and cheese is melted.
