# Ingredients:

01 - 1 tablespoon salt
02 - 1 tablespoon ground black pepper
03 - ½ tablespoon Italian seasoning
04 - ½ tablespoon garlic powder
05 - ½ tablespoon onion powder
06 - ½ tablespoon paprika, regular or smoked
07 - 3 pound beef eye of round roast, room temperature

# Instructions:

01 - Preheat the oven to 500 degrees Fahrenheit.
02 - Add salt, ground black pepper, Italian seasoning, garlic powder, onion powder, and paprika to a small bowl. Mix together to combine.
03 - Sprinkle the seasoning mix over the beef roast and rub it well to coat the roast completely. Some seasoning blend may remain unused.
04 - Place the seasoned roast into a roasting pan or baking dish without covering or adding anything else.
05 - Place the pan in the oven and immediately reduce the temperature to 475 degrees Fahrenheit. Roast for 7 minutes per pound (e.g., 21 minutes for a 3-pound roast). If the crust browns too much, loosely cover with foil.
06 - Turn off the oven and let the roast sit in the hot oven undisturbed for 2 to 2.5 hours. Do not open the oven door during this period.
07 - Remove the roast from the oven. The internal temperature should reach 145 degrees Fahrenheit. Place the roast on a cutting board and carve into thin slices. Serve immediately.
