Using a mixer, blend cream cheese and butter until creamy. Mix in vanilla and powdered sugar. Add milk a little at a time to get the texture you want.

Mix together sugar, salt, flour, baking soda, and baking powder in a big bowl.

Pour egg, oil, food coloring, and milk into the middle of the dry mix. Stir just until blended. Toss in sprinkles if you’d like.

On a hot pan set to medium-high, pour 1/4 cup of batter for each pancake. Wait for bubbles to show (around 2 minutes), flip, and cook for another minute or so until golden.
