Pink Cadillac Pasta Salad (Print Version)

# Ingredients:

01 - 1 small red onion, quartered and thinly sliced
02 - 16 oz elbow macaroni
03 - 2 ribs celery, thinly sliced
04 - 1 green or yellow bell pepper, thinly sliced
05 - 2 tablespoons dill pickle relish
06 - 2 cups Catalina dressing
07 - 2/3 cup mayonnaise
08 - Kosher salt, to taste
09 - Freshly ground black pepper, to taste

# Instructions:

01 - Soak the red onion in a bowl of ice water while you prepare the rest of the ingredients, ideally for 30 minutes.
02 - In a large pot of salted boiling water, cook the macaroni according to the package directions. Drain and spread pasta out on a baking sheet to cool.
03 - Thinly slice the celery and the bell pepper and set them aside.
04 - In a large bowl, whisk together the Catalina dressing, mayonnaise, and dill pickle relish. Season with salt and pepper.
05 - Drain the red onion and add it to the bowl along with the cooled pasta, celery, and bell pepper. Stir to combine and adjust seasoning as needed.
06 - Chill the pasta salad until ready to serve. Enjoy!
