Peruvian Chicken Rice (Print Version)

# Ingredients:

→ Chicken & Marinade

01 - 2 tablespoons oil (any kind you like)
02 - 1 tablespoon cumin powder
03 - 1/2 teaspoon freshly ground black pepper
04 - 1.5-2 lbs chicken thighs or chicken breasts
05 - 2 tablespoons lime juice or any white vinegar
06 - 2-3 minced garlic cloves
07 - 1 teaspoon smoked paprika
08 - 1 teaspoon kosher salt

→ Green Sauce

09 - 1 cup of fresh cilantro (just the leaves)
10 - 1/2 cup of mayonnaise
11 - 1 tablespoon olive oil
12 - 2 peeled garlic cloves
13 - 1/4 cup sour cream
14 - 1 tablespoon lemon or lime juice
15 - 2 jalapeño peppers, roughly chopped

→ Yellow Rice

16 - 1/4 teaspoon cumin powder
17 - 1/4 of an onion, chopped into small pieces
18 - 1/4 teaspoon ground black pepper
19 - 1 tbsp butter or a splash of oil
20 - 1 teaspoon turmeric powder
21 - 2-3 garlic cloves, finely diced
22 - 1/4 teaspoon salt
23 - 1/4 teaspoon onion powder
24 - 1 cup jasmine rice
25 - 2 cups chicken stock
26 - 1 cup frozen peas

# Instructions:

01 - In a bowl, combine all the marinade ingredients and save 1/4 cup for basting the chicken later. Smother the chicken in the rest of the marinade and let it chill in the fridge for at least 1 hour or up to a whole night.
02 - Heat up your grill to medium-high or your oven to 450ºF. If you're planning to serve rice on the side, this is the time to begin preparing it.
03 - Grill the chicken for about 5-7 minutes on each side, or bake it in the oven for 30 minutes. Make sure it reaches 165ºF inside. Halfway through, coat the chicken with the marinade you set aside.
04 - Wash and soak the rice for around 10-15 minutes. In a pot, cook the garlic and onion in butter. Stir in the rice and seasoning. Pour in the chicken stock, bring the mixture to a boil, then reduce heat and cover it to simmer for 15 minutes. Mix in the frozen peas after and let it sit undisturbed before serving.
05 - Throw all the sauce ingredients into a blender and blend it until smooth and creamy. Add salt and pepper to taste.
06 - Serve the fluffy rice, add chicken on top, and finish with a drizzle of the flavorful green sauce.

# Notes:

01 - Feel free to use any kind of chicken, including drumsticks, thighs, breasts, or a whole one.
02 - You can marinate the chicken anywhere from 1 hour up to overnight for maximum flavor.
