Mast-o Khiar (Print Version)

# Ingredients:

01 - A handful of raisins, soaked beforehand.
02 - Three small cucumbers, the Persian kind.
03 - 1/2 cup of roughly chopped walnuts.
04 - 1 1/2 cups of thick Greek yogurt.
05 - 3 tablespoons of freshly chopped dill.
06 - A pinch of dried mint, about 1 teaspoon.
07 - Two cloves of garlic, finely minced.
08 - Salt and pepper—use as much as you like.
09 - Drizzle some olive oil on top as a finishing touch.
10 - Rose petals for decoration, totally optional.

# Instructions:

01 - Cut cucumbers into small pieces, sprinkle with salt, and leave for 15 minutes. Get rid of the leftover water after draining.
02 - Throw the cucumbers, yogurt, walnuts, raisins, garlic, herbs, and seasonings into a bowl, and mix it all together.
03 - Have a taste and tweak the flavors until you're happy with them.
04 - Top it off with a little olive oil, and sprinkle whatever extras you'd like—herbs, raisins, or nuts.

# Notes:

01 - If you're out of Persian cucumbers, English ones work fine.
02 - Soaking the raisins first helps soften them.
03 - Great as a side dish or even a dip.
