Cranberry Orange Chicken (Print Version)

# Ingredients:

01 - 4 boneless, skinless chicken thighs or breasts.
02 - 1 large orange, juiced and zested.
03 - 1 cup of fresh cranberries.
04 - 2 tablespoons of maple syrup or honey.
05 - A tablespoon of olive oil.
06 - 2 cloves of garlic, minced.
07 - A teaspoon of thyme or rosemary (use half if dried).
08 - Add some salt and pepper to taste.
09 - Half a cup of chicken stock or plain water.
10 - A tablespoon of balsamic vinegar if you'd like.
11 - A teaspoon of Dijon mustard, optional.

# Instructions:

01 - Sprinkle the chicken with herbs, salt, and pepper. Let it sit while you get the other stuff ready.
02 - Warm up oil in a big skillet. Brown the chicken for 4-6 minutes on each side till golden. Put aside.
03 - In the same pan, sauté garlic till it smells good. Toss in cranberries, orange zest, juice, and maple syrup. Simmer for 5-7 minutes until berries soften and pop.
04 - Place chicken back in the pan. Pour in chicken broth, scrape the bottom of the pan, and cover. Let it cook for 10-12 minutes or until cooked through (165°F).
05 - Spoon sauce on top and add orange zest or fresh herbs if you'd like before serving.

01 - You can pick thighs instead of breasts.
02 - Feel free to make the sauce early.
03 - Optional items add extra layers of flavor.
