Olive Salad with Pimento (Print Version)

# Ingredients:

01 - 3/4 cup green olives stuffed with pimentos
02 - 1/3 cup kalamata olives, pitted
03 - 1/4 cup Italian Giardiniera
04 - 3 pepperoncini
05 - 3 tablespoons pickled onion
06 - 2 tablespoons capers
07 - 1 clove garlic
08 - 1 1/2 teaspoons oregano
09 - 1/2 teaspoon black pepper
10 - 1 tablespoon fresh lemon juice
11 - 2 tablespoons olive oil

# Instructions:

01 - Drain all jarred ingredients and add to a large food processor or blender.
02 - Add all remaining ingredients and pulse until the mixture is finely chopped.
03 - Store in an airtight container and refrigerate for a minimum of 8 hours before serving (best served the following day).

# Notes:

01 - The flavor improves significantly when left to rest overnight.
