Mushroom Paté Herb Spread (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil
02 - 1 medium onion, coarsely chopped
03 - 2 pounds fresh mushrooms, finely chopped
04 - 4 cloves garlic, pressed
05 - 2 tablespoons chopped fresh parsley
06 - 1/2 teaspoon dried thyme
07 - 1 cup seasoned bread crumbs
08 - 2 tablespoons lemon juice
09 - Salt and pepper to taste

# Instructions:

01 - Heat olive oil in a large skillet over medium heat. Add onion and cook for 6 minutes until softened.
02 - Add mushrooms to the skillet and cook for 10-15 minutes or until browned and liquid has evaporated.
03 - Stir in garlic and cook for 2 minutes until fragrant.
04 - Remove from heat and add parsley, thyme, bread crumbs, lemon juice, salt, and pepper. Mix well and let cool for 20 minutes.
05 - Transfer the mixture to a food processor and blend until smooth. Adjust seasoning with additional salt and pepper if needed.
06 - Serve with crusty bread, crackers, or pita chips. Refrigerate leftovers for up to 5 days.
