Heat olive oil in a large skillet over medium heat. Add onion and cook for 6 minutes until softened.

Add mushrooms to the skillet and cook for 10-15 minutes or until browned and liquid has evaporated.

Stir in garlic and cook for 2 minutes until fragrant.

Remove from heat and add parsley, thyme, bread crumbs, lemon juice, salt, and pepper. Mix well and let cool for 20 minutes.

Transfer the mixture to a food processor and blend until smooth. Adjust seasoning with additional salt and pepper if needed.
