Chicken Mushroom Bowl (Print Version)

# Ingredients:

01 - 1 medium onion, chopped small.
02 - 2 tablespoons butter or olive oil.
03 - 2 garlic cloves, chopped finely.
04 - 6 cups broth made from chicken.
05 - Half a teaspoon of rosemary (dried).
06 - 1 cup chopped spinach or kale (optional).
07 - 2 cups mushrooms, cut into slices.
08 - Quarter cup plain flour.
09 - Fresh chives or parsley for topping.
10 - Add salt and pepper as needed.
11 - Half a teaspoon of dried thyme.
12 - 2 cups shredded chicken from a rotisserie.
13 - Half a cup of heavy cream or half-and-half.

# Instructions:

01 - Heat oil in a pot and cook onions until soft (about 4 minutes). Mix in garlic for half a minute.
02 - Toss in mushrooms and cook them for 5 to 7 minutes until they're golden.
03 - Sprinkle flour over the mushrooms. Stir for 2 minutes, then slowly pour in the broth while stirring.
04 - Stir in thyme and rosemary, then let it cook gently for 10 minutes.
05 - Mix in the chicken, cream, and greens if using. Let it cook for 5 minutes, then season how you like.

# Notes:

01 - Rotisserie chicken makes it quicker.
02 - You can pick any type of mushroom you like.
03 - Freeze before adding cream for best results.
