Chocolate Lava Cakes Valentine (Print Version)

# Ingredients:

→ Cake Base

01 - 6 ounces (170g) quality dark semi-sweet chocolate chunks
02 - 1/2 cup (113g) butter, unsalted
03 - 1/4 cup (31g) flour
04 - 1/2 cup (60g) powdered sugar
05 - 1/8 teaspoon salt
06 - 2 large eggs, whole
07 - 2 large egg yolks, separated

→ Optional Toppings

08 - Scoops of ice cream
09 - Seasonal berries
10 - Drizzled chocolate sauce

# Instructions:

01 - Coat four 6-ounce ramekins with cooking spray then lightly cover with cocoa powder. Heat your oven to 425°F.
02 - Put butter with chopped chocolate in microwave. Heat in short 10-second bursts, mixing between each until completely melted.
03 - In one container stir flour, sugar and salt together. In another bowl beat eggs and yolks. Mix everything with the melted chocolate until it looks uniform.
04 - Split the mixture evenly into ramekins. Pop them in the oven for 12-14 minutes until edges feel set but centers stay soft.
05 - Let them sit for 1 minute, then flip onto dishes. Top with extras and eat right away.

# Notes:

01 - Always pick good chocolate bars, skip the baking chips
02 - Works in a muffin tin too, just cook 8-10 minutes
03 - You can mix everything up 2 days before cooking
04 - They taste best when eaten straight from the oven
