Tres Leches Berry Cake (Print Version)

# Ingredients:

→ For the Cake

01 - 2 cups (240g) of plain flour
02 - 12 tablespoons (171g) softened unsalted butter
03 - 4 teaspoons of baking powder
04 - 1 teaspoon of salt
05 - 1¾ cups (350g) of regular sugar
06 - 6 large egg whites at room temperature
07 - 1 cup (240mL) heavy cream, needs to be at room temperature
08 - 2 tablespoons (15g) of cornstarch
09 - 2½ teaspoons of vanilla essence

→ For the Whipped Cream

10 - 1½ tablespoons (20g) sugar
11 - 1½ cups (300mL) of heavy cream
12 - 1 teaspoon of vanilla flavoring

→ For the Berry Filling

13 - ½ cup (57g) raspberries left whole
14 - ¾ cup (85g) blueberries, not smashed
15 - ½ cup (113g) strawberries, cut into four pieces
16 - ¾ cup (85g) blackberries, just as they are

→ For the Tres Leches Syrup

17 - ¼ cup (60mL) of heavy cream
18 - 8 ounces (240mL) of evaporated milk
19 - 8 ounces (227g) condensed sweet milk

# Instructions:

01 - Heat the oven to 350°F (177°C). Grease and dust two 8 or 9-inch round pans with flour. Blend all the dry components and mix in the butter till it resembles sand. Mix the wet items. Stir together until the mixture is smooth and even.
02 - Split the mixture evenly into the prepared pans. Bake them for about 28 to 32 minutes or till you poke a toothpick in and it comes out clean. Let them cool inside the pans, sitting on a rack.
03 - Whisk together the cream, sugar, and vanilla until you see them form stiff peaks. Stick them aside for later.
04 - Toss all the berries together gently in a bowl. Carefully fold 1 cup of the whipped cream through the berries until they’re coated evenly.
05 - Mix together the evaporated milk, sweet condensed milk, and cream. Whisk until the mixture is smooth.
06 - Layer the cake alternately with syrup, the berry mix, and whipped cream. Chill it in the fridge for at least 2 hours before serving it up.

02 - The cake can stay frozen for as long as 3 months
