Golden Crispy Mashed Puffs (Print Version)

# Ingredients:

01 - 3 cups chilled mashed potatoes
02 - 1 large egg
03 - 1 cup shredded cheddar cheese
04 - 1 tablespoon chopped chives (dried)
05 - 1/4 cup all-purpose flour
06 - 1 teaspoon onion salt
07 - Salt and pepper to taste

→ For Coating

08 - 1 cup grated Parmesan cheese

# Instructions:

01 - Preheat your oven to 400°F and grease a muffin pan with cooking spray or butter.
02 - In a large bowl, mix together the chilled mashed potatoes, egg, shredded cheddar, chives, flour, onion salt, salt, and pepper until well combined.
03 - Roll the mixture into 1-inch balls, then coat each ball in grated Parmesan cheese.
04 - Place the coated potato balls into the prepared muffin pan and gently press down to form a puff shape.
05 - Bake for 15-20 minutes, or until the puffs are golden brown and crisp on the outside.
06 - Let them cool for a few minutes before removing them from the pan and serve warm.

# Notes:

01 - These can be frozen for later! Let them cool completely and store in an airtight container.
