Maple Roasted Carrots in Tahini (Print Version)

# Ingredients:

→ Carrots and Roasting

01 - 2 pounds carrots, cleaned and trimmed
02 - 1 tablespoon oil
03 - 1 tablespoon maple syrup

→ Tahini Sauce

04 - 2 tablespoons tahini
05 - 2 tablespoons lemon juice
06 - 1 teaspoon white miso paste (or soy sauce or tamari for gluten-free or salt)
07 - 1 teaspoon maple syrup
08 - 1 small clove garlic, grated
09 - 2 tablespoons water

→ Toppings

10 - 2 tablespoons pomegranate
11 - 2 tablespoons pistachios, chopped
12 - 1 tablespoon parsley or cilantro, chopped

# Instructions:

01 - Toss the carrots in a mixture of oil and maple syrup. Arrange in a single layer on a baking sheet and roast in a preheated 400°F (200°C) oven until tender, about 20-30 minutes, turning once halfway through.
02 - Mix tahini, lemon juice, miso, maple syrup, garlic, and enough water to reach the desired sauce consistency.
03 - Serve the roasted carrots topped with tahini sauce, pomegranate seeds, chopped pistachios, and parsley or cilantro. Enjoy immediately.
