Kashmiri Pink Tea (Print Version)

# Ingredients:

→ Tea Base

01 - 4 cups of water
02 - 2 cups of whole milk
03 - 2 tablespoons of green tea, ideally Himalayan or Kashmiri (regular green tea works too)

→ Spices & Additives

04 - 1-2 whole star anise
05 - A stick of cinnamon
06 - 2 cardamom pods, crushed slightly
07 - Half a teaspoon of baking soda
08 - A tiny pinch of salt (about 1/4 teaspoon)

→ For Serving

09 - Honey or sugar for desired sweetness
10 - Optional crushed almonds as a topping

# Instructions:

01 - Put water in a pot, bring it to a rolling boil, add the green tea leaves, and cook for roughly 5 minutes.
02 - Toss in the baking soda and stir it up well. The liquid will shift to a deep reddish hue. Keep boiling this for an additional 2 minutes.
03 - Drop in the star anise, ground cardamom pods, and cinnamon stick. Let the mix bubble for one more minute.
04 - Turn the heat down and let it simmer on low for about 20 to 30 minutes. This will condense the taste and deepen the color even further.
05 - Mix in the salt, then pour in the milk. Stir without stopping and let it come back to a boil. The green tea will miraculously turn pink.
06 - Strain the tea into cups, sweeten with honey or sugar to your liking, and sprinkle some crushed nuts on top if you want. Serve it steaming hot.
