Crispy Potato Bombs (Print Version)

# Ingredients:

01 - 3 large russet potatoes.
02 - 12 cheddar cubes.
03 - 3 strips of bacon.
04 - 1 tablespoon sour cream plus 1/4 cup for dipping.
05 - 1 teaspoon each of salt, black pepper, and dried parsley.
06 - 2 tablespoons unsalted butter.
07 - 3-4 cups of frying oil.
08 - 2 whole eggs.
09 - 1/2 cup all-purpose flour.
10 - 1 cup of breadcrumbs.
11 - 1 tablespoon of your favorite seasoning.
12 - 1/4 cup mayo.
13 - 1/4 cup of finely chopped green onions.
14 - 1 tablespoon fresh lemon juice.

# Instructions:

01 - Boil peeled potatoes till soft, then mash with butter, sour cream, and seasonings.
02 - Scoop mashed potatoes, form golf-ball shapes, and tuck in cheese and bacon.
03 - Dip balls in flour first, then eggs, and finish with breadcrumbs.
04 - Fry in hot oil on medium heat for about 2 minutes till crispy and golden.
05 - Combine mayo, sour cream, lemon juice, green onion, and spices. Serve with fried balls while warm.

# Notes:

01 - You can make and chill the balls before breading.
02 - Don’t let oil overheat, so cheese melts while outside crisps.
