Blend or smash cookies into fine crumbs, then mix them with butter in a bowl. Pack the mixture evenly into a 9x13 dish and stick it in the fridge to chill.

Beat softened cream cheese, sugar, lemon juice, lemon zest, half a cup of cream, and 1 teaspoon of lemon extract using a hand mixer. Get it fluffy (about 2–3 minutes), then spread over the crust. Cover and chill again.

Stir the pudding mix into the cold milk for about 2 minutes. Pour this over the cream cheese layer, spread evenly, and pop back in the fridge before it sets.

Whip 1 1/2 cups of cream with the vanilla, remaining lemon extract, and powdered sugar until it gets firm and holds shape. Cover the pudding layer with this mix and refrigerate for 4+ hours.
