Lemon Garlic Shrimp (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1/3 cup dry orzo pasta
02 - 1 lemon
03 - 1 lb large shrimp, cleaned and peeled
04 - 5 garlic cloves, sliced thin
05 - 1/3 cup minced shallots
06 - 2 tablespoons olive oil, set aside in two parts
07 - 4 tablespoons butter, split in half
08 - Pinch of crushed red pepper flakes
09 - 1/3 cup dry white wine (or swap with broth and a splash of vinegar)

→ Herbs & Seasonings

10 - Freshly cracked black pepper
11 - Kosher salt
12 - 2 tablespoons finely chopped chives
13 - 1/4 cup fresh parsley, chopped small

# Instructions:

01 - Mix shrimp with some olive oil, grated lemon peel, garlic, salt, and black pepper.
02 - Use butter to cook shrimp for around 3 minutes until cooked through. Move to a separate bowl.
03 - Using a mix of oil and butter, cook garlic, chili flakes, and shallots. Stir in orzo to toast for a couple of minutes. Add wine and let it reduce.
04 - Pour in water and simmer, letting the orzo soak up the liquid and soften. Leave uncovered for about 12 minutes.
05 - Put shrimp back in the pan with half of the chopped herbs. Add a drizzle of olive oil, a squeeze of lemon, remaining herbs, and more pepper as garnish.

# Notes:

01 - Can be stored in the fridge for up to 3 days.
02 - Add some extra liquid when warming up to plump up orzo.
03 - Squeeze fresh lemon on top after reheating for brightness.
