08 - 2 skinless, boneless chicken breast halves, cut into 1 1/2-inch pieces

# Instructions:

01 - Gather all ingredients and prepare them as described (chopping onions, tomato, garlic, and slicing habanero pepper if using).
02 - Heat vegetable oil in a skillet over medium-high heat. Add onion, tomato, habanero pepper, garlic, curry powder, and thyme. Cook while stirring until the onion becomes golden, approximately 7 minutes.
03 - Add the chicken pieces to the skillet and cook until lightly browned, about 5 minutes.
04 - Pour water into the skillet. Reduce the heat to low, cover, and simmer until the chicken is cooked through and no longer pink at the center, about 30 minutes. Season with salt to taste.
