01 - 8 oz cream cheese, softened
02 - 1 tbsp freshly minced jalapeno (adjust to taste)
03 - 3 tbsp crumbled cooked bacon
04 - 1 cup sharp cheddar cheese (shredded, divided)
05 - Salt and pepper to taste
06 - 2 tbsp unsalted butter
07 - 8 cooked hot dogs
08 - 8 hot dog buns
09 - Cilantro for garnish (optional)

# Instructions:

01 - Heat 2 tablespoons of butter in a skillet over medium-high heat. Add the hot dogs and cook for 2-3 minutes until browned. Roll them over and cook the other side for another 2-3 minutes until they reach your desired level of browning.
02 - In a bowl, mix together the cream cheese, minced jalapeno, crumbled bacon, and half of the shredded cheddar cheese until well combined. Add a pinch of salt and taste; adjust seasoning by adding more jalapeno, salt, or pepper if needed.
03 - Spread 1-2 tablespoons of the cream cheese mixture evenly inside each hot dog bun. Place a cooked hot dog into each bun and sprinkle the remaining shredded cheddar cheese over the top, dividing it evenly.
04 - Lay the assembled hot dogs on a baking sheet lined with foil. Place them under the broiler with the oven door slightly ajar. Watch closely and broil for 30-60 seconds until the cheese melts to your liking, then remove them from the oven.
05 - Garnish the hot dogs with freshly chopped cilantro, if desired. Serve immediately and enjoy your Jalapeno Popper Hot Dogs.
