Chicken Hummus Naan (Print Version)

# Ingredients:

→ Wrap Components

01 - 4 naan breads
02 - 1 cup roasted hummus made with red peppers
03 - 4 cups fresh spring greens
04 - 3 cups cooked, shredded chicken
05 - 4 tablespoons soft feta or goat cheese

→ Vegetable Mix

06 - 1/2 cup cucumber, peeled and quartered
07 - 1 cup small cherry tomatoes, halved
08 - 1/2 cup finely diced red onion
09 - 1/4-1/3 cup red wine vinaigrette dressing (homemade)

→ Optional Toppings

10 - 1 1/2 teaspoons vinaigrette for each wrap
11 - A pinch of black pepper and sea salt
12 - A drizzle of olive oil (extra virgin)

# Instructions:

01 - Lightly toast naan in an oven set to low broil for 3-5 minutes on each side, until golden at the edges.
02 - In a bowl, toss together cucumber, red onion, and cherry tomatoes. Add a splash of vinaigrette and stir well.
03 - Smear each piece of naan with hummus. Pile on spring greens, chicken, veggie mix, and sprinkle with cheese.
04 - Finish with vinaigrette, salt, pepper, and a touch of olive oil. Serve right away or tie it up with string if packing to go.
