                Preheat your oven to 400°F and line a baking tray with parchment.

                Toss the sausage, thyme, breadcrumbs, sharp cheddar, and 1 egg into a bowl. Mash it all together until smooth.

                In a small dish, stir the leftover egg with a splash of water for a wash.

                Take the puff pastry sheets and slice each one into two lengthwise strips. You’ll have four in total.

                Form the sausage mix into four log shapes, placing each one onto a pastry strip. Spread mustard on one side and drizzle egg wash on the other before rolling and sealing them tight.

                Use a knife to cut the logs into 1.5-inch pieces and score the tops. Coat with egg wash, sprinkle on seasoning, and bake for around 18-20 minutes until they’re golden brown.
