Hot Honey Sausage Rolls (Print Version)

# Ingredients:

01 - 16 oz savory breakfast sausage with sage.
02 - Half a cup of freshly shredded sharp cheddar.
03 - 1/2 cup panko-style breadcrumbs.
04 - Two eggs, saved separately.
05 - Two spoonfuls of Dijon mustard.
06 - A tablespoon of fresh thyme, plus a bit extra for sprinkling.
07 - Two sheets (17.3 oz total) of chilled puff pastry.
08 - Couple of spoons of Everything Bagel seasoning.
09 - Hot honey to drizzle on top.

# Instructions:

01 - Preheat your oven to 400°F and line a baking tray with parchment.
02 - Toss the sausage, thyme, breadcrumbs, sharp cheddar, and 1 egg into a bowl. Mash it all together until smooth.
03 - In a small dish, stir the leftover egg with a splash of water for a wash.
04 - Take the puff pastry sheets and slice each one into two lengthwise strips. You’ll have four in total.
05 - Form the sausage mix into four log shapes, placing each one onto a pastry strip. Spread mustard on one side and drizzle egg wash on the other before rolling and sealing them tight.
06 - Use a knife to cut the logs into 1.5-inch pieces and score the tops. Coat with egg wash, sprinkle on seasoning, and bake for around 18-20 minutes until they’re golden brown.
