Homemade Noodles For Soup (Print Version)

01 - 2 large eggs
02 - 2 cups all-purpose einkorn flour or regular flour
03 - 2 tablespoons milk
04 - 1 teaspoon salt

# Instructions:

01 - In a large bowl, add eggs, flour, milk, and salt. Using your hands or a stand mixer, stir together the ingredients and knead for 2-3 minutes if using einkorn flour, or 8-10 minutes for all-purpose flour, until the dough forms a smooth ball.
02 - Allow the dough to rest uncovered for 5-10 minutes.
03 - Lightly dust the work surface with flour. Using a rolling pin, roll out the dough to approximately 1/4 inch thickness, turning it frequently.
04 - Use a pizza cutter to slice the dough into the desired size and shape of noodles.
05 - Cook the noodles in boiling water or soup for 3-5 minutes. Taste to determine doneness.

# Notes:

01 - If using einkorn flour, kneading is minimal. For all-purpose flour, knead for almost 10 minutes to develop gluten strands.
02 - If the dough is sticky, add flour one tablespoon at a time until it is manageable.
03 - Stone countertops may not require dusting with flour, but wood surfaces should be lightly dusted to prevent sticking.
